Autumn has become not only the season of falling leaves, but also of the #PSL (or ‘pumpkin spice latte’ for those wondering). Yum. I love pumpkin spice, especially in baking, and find it a familiar and comforting flavour at this chilly time of year. I wanted to get all the cozy flavours of pumpkin spice but in a smoothie without artificial ingredients. I give you the
lazily creatively named: PUMPKIN SPICE SMOOTHIE. It’s like drinking a pumpkin pie!
No, there is no pumpkin in it. These are simple ingredients that I pretty much always have in my kitchen. When a PSL craving strikes, I don’t have the will to faff around with carrying a pumpkin home and cutting it up. The Starbucks version does list pumpkin puree as an ingredient, but it also includes all this stuff. I like indulgent drinks as much as anyone, but this is a healthier version I can make at a fraction of the cost. This PUMPKIN SPICE SMOOTHIE has inexpensive ingredients and takes just a few minutes to throw together. It’s super creamy and the ginger gives it this lovely heat. By the way, isn’t this little turquoise plate so cute? I picked it up at a shop near the Tsukiji Fish Market in Tokyo this summer. More on that trip to come!
PUMPKIN SPICE SMOOTHIE
1 cup almond milk
2-3 ripe bananas
1 inch cube fresh ginger
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon cinnamon
sprinkle of pink salt
+ The more bananas you use, the thicker and creamier the smoothie will be. One banana would be fine but, personally, I think three is yummiest. Make sure to use ripe bananas (speckled with lots of black spots) so they’re nice and sweet.
+ If you don’t have pumpkin pie spice in the cupboard, you can make your own by combining ground cinnamon, ginger, nutmeg, allspice and cloves.
